Equipment

  • Optional: Blender or food processor if you need to blend or process any ingredients, such as the sea moss gel.

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar (optional)
  • 1/4 tsp salt
  • 1 cup milk (dairy or plant-based)
  • 1 tbsp melted butter or coconut oil
  • 1 tbsp sea moss gel
  • 1 large egg
  • 1 tsp vanilla extract
  • Butter or oil for cooking
  • Maple syrup, fresh fruits, or toppings of your choice

Instructions

  • In a large mixing bowl, whisk together the flour, baking powder, sugar (if using), and salt until well combined.
  • In a separate bowl, whisk together the milk, melted butter or coconut oil, sea moss gel, egg, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps in the batter.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for another 1-2 minutes on the other side, or until golden brown and cooked through
  • Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter, adding more butter or oil to the skillet as needed.
  • Serve the sea moss pancakes warm with maple syrup, fresh fruits, or your favourite toppings.
